FOG is any fats, oils, and grease that is used in, or is a byproduct of, the cooking or food preparation process. FOG that is discharged into the sanitary sewer system can harden over time causing damaging blockages.
FOG fees are in place for food service establishments that have the potential to contribute commercial amounts of FOG to the sanitary sewer system. These fees are in place to better accommodate for the costs of FOG maintenance throughout wastewater infrastructure.
