FOG is any fats, oils, and grease that is used in, or is a byproduct of, the cooking or food preparation process. FOG that is discharged into the sanitary sewer system can harden over time causing damaging blockages. 

FOG fees are in place for food service establishments that have the potential to contribute commercial amounts of FOG to the sanitary sewer system. These fees are in place to better accommodate for the costs of FOG maintenance throughout wastewater infrastructure. If you are a food service establishment, identify your FOG fee using the charts below.

1. Identify the Food Service Establishment's Class

Class System 
Class 1
  •  Food service establishment that does NOT have a grease interceptor
Class 2
  • Schools
  • Childcare facilities
  • Industrial or institutional establishments
  • Apartments or housing with more than 20 units
  • Gas stations with grease producing food processes that have a grease removal device
  • Restaurants with grease producing food processes that have a grease removal device
Class 3
  •  Hotels
  • Churches
  • Restaurants that serve food with no grease producing processes
  • Gas stations that serve food with no grease producing processes

 2. Identify Fee According to Class

Fees
 Class 1
  •  $80/month
 Class 2
  •  $20/month
 Class 3
  •  $5-$20/month
    • Schools: $20/month
    • Childcare facilities: $20/month
    • Gas stations without grease removal device: $20/month
    • Gas stations with grease removal device: $5/month
    • Commercial: $20/month
    • Churches: $5/month
    • Hotels: $15/month
    • Apartments/housing: $20/month
    • Concessions (4 times a year): $20/month
